olive oil sirloin steaks 2, fat removed red wine vinegar 2 tbsp good quality Dijon mustard 1 tsp salad leaves 2 handfuls Gorgonzola or creamy blue cheese 100g, crumbled

| Heat a griddle (chargrill) or frying pan to very hot. Oil and season the steaks, then cook for 2 minutes each side for rare, 3 for medium. Rest for 5 minutes under foil. Whisk the vinegar and mustard with 4 tbsp oil. Slice the steak and toss with the salad and dressing. Top with cheese. |
