cherry and small plum tomatoes|400g, use one or a mixture of both, cut a cross into each garlic|2 cloves, finely chopped olive oil balsamic vinegar|2 tbsp basil|a handful of leaves, torn baking parchment|4 squares, sides folded up to make containers

| Heat the oven to 200C/fan 180C/Gas 6. Divide the tomatoes, garlic, 2 tbsp olive oil and balsamic vinegar between the containers. Roast on a baking sheet for 20-25 minutes. Scatter with basil and serve hot with crusty bread. |
