| Baked vanilla peaches |

| These can be served hot or cold and will keep for a day in the fridge. |

peaches 4 butter 50g vanilla pod 1 honey 4 tbsp white wine 300ml ice cream to serve

| Heat the oven to 160C/fan 140C/gas 3. Cut a cross in the top of each peach. Butter a roasting tin or baking dish and add the peaches. Cut the vanilla pod in half and scrape out the seeds and sprinkle over the peaches along with the pod. Top each peach with a spoonful of honey, add the white wine and bake for 45 minutes. Serve with ice cream. |
